The Dough Texture Test

Properly mixed cookie dough should hold together when squeezed but shouldn't be sticky. If it's too dry, add milk 1 tsp at a time. If too sticky, add flour 1 tbsp at a time.

For chocolate chip cookies, the dough should be soft but not wet. When you press it flat with your fingers, the edges should crack slightly but maintain their shape.
